Maple syrup grades range from golden color with a delicate taste to very dark color with a strong taste. The lighter the color and the more delicate taste typically come earlier in the season. As the sugaring season progresses the color darkens and the taste develops a more pronounced maple flavor. The change over the course of the season is due to increased microbial growth. All grades are delicious with pancakes, waffles, french toast and all of your usual favorites. if you are cooking with the syrup the darkest grade will retain the maple flavor best.
